Try this hands-off chicken fajita recipe on a busy weeknight to have a complete Mexican dinner recipe on the table in just over 30 minutes. Just add a side of guacamole!

Ingredients

  • ¼ cup olive oil

  • 3 tablespoon lime juice

  • 3 tablespoon Worcestershire sauce

  • 4 teaspoon chili powder

  • 4 cloves garlic, minced

  • 1 teaspoon sugar

  • ½ teaspoon salt

  • 1 pound skinless, boneless chicken breast halves

  • 4 cup red, green, yellow, and/or orange sweet pepper strips

  • 1 medium onion, thinly sliced

  • 8 7-8 inch flour tortillas, warmed

  • Desired toppings, such as pico de gallo, chopped avocado, and/or sour cream

Directions

  1. Preheat broiler. For sauce, in a medium bowl combine first seven ingredients (through salt). Remove 1/4 cup of the sauce. Add chicken to remaining sauce, turning to coat.

  2. In a 15x10-inch baking pan combine sweet peppers and onion. Drizzle with reserved 1/4 cup sauce. Top with chicken.

  3. Broil 4 to 5 inches from heat 15 to 18 minutes or until chicken is done (165°F) and vegetables are charred, turning chicken once.

  4. Slice chicken. Serve chicken and vegetables in tortillas with toppings.
