Ingredients

  • 1 cup chopped celery

  • 1 cup chopped carrots

  • ½ cup chopped onion

  • 1 tablespoon olive oil

  • 1 ½ cup chopped, unpeeled apples

  • 2 teaspoon curry powder

  • ½ teaspoon salt

  • ½ teaspoon dried thyme, crushed or 1 tsp. fresh thyme leaves

  • 2 14.5 ounce cans reduced-sodium chicken broth

  • ¼ cup apple juice

  • ½ cup half-and-half or light cream

  • 2 tablespoon all-purpose flour

  • 1 pound chopped cooked chicken breast

Directions

  1. In a large saucepan cook celery, carrots, and onion in hot oil over medium heat 5 minutes. Stir in apples, curry powder, salt, and dried thyme. Cook and stir 3 to 4 minutes more or until apples are just tender. Stir in broth and apple juice. Bring to boiling; reduce heat.

  2. In a screw-top jar combine the half-and-half and flour; shake well. Stir into saucepan. Cook and stir until slightly thickened and bubbly. Stir in chicken; heat through.

  3. If desired, top each serving with fresh apple slices and snipped fresh thyme1.
