Directions

  1. In a medium bowl stir together flour, sugar, and ground almonds. Using a pastry blender, cut in butter until pieces are pea size. In a small bowl combine egg yolk and 2 tablespoons of the ice water. Gradually stir egg yolk mixture into flour mixture just until all of the flour mixture is moistened. If necessary, stir in another 1 tablespoon of the ice water, 1 teaspoon at a time, to moisten. Gather flour mixture into a ball, kneading gently until it holds together. If necessary, cover and chill about 1 hour or until easy to handle.
  2. Preheat oven to 350 degrees F. Shape dough into 24 balls. Press balls evenly onto the bottoms and up the sides of 24 ungreased 1 3/4-inch muffin cups. Bake about 15 minutes or until light brown. Cool in pan on a wire rack. Remove tartlet shells from pan.
  3. For filling, in a medium bowl beat pudding mix, evaporated milk, vanilla, and almond extract with an electric mixer on medium speed about 2 minutes or until smooth and fluffy. Spoon 2 teaspoons of the filling into each tartlet shell. Cover and chill for 2 to 24 hours.
  4. Before serving, top each tartlet with about 1/2 teaspoon of the preserves.

Make-Ahead Directions:

Prepare as directed through Step 3. Place tartlets in a single layer in an airtight container; cover. Store in the refrigerator for up to 3 days or freeze for up to 1 month. To serve, thaw tartlets in the refrigerator if frozen. Continue as directed in Step 4.
