Directions

  1. Preheat oven to 350 degrees F. Lightly grease a 13x9x2-inch baking pan with coconut oil; set aside.
  2. Place the 2/3 cup coconut oil in a small microwave-safe bowl. Microwave on 100 percent power (high) about 20 seconds or until melted; set aside.
  3. In a large bowl stir together cocoa powder and baking soda; add half of the melted coconut oil, stirring to combine. Add the boiling water; stir until smooth. Add granulated sugar, brown sugar, eggs, and the remaining melted coconut oil, stirring until smooth. Add coconut flour, vanilla, and salt; stir until well mixed. Stir in dried cherries. Pour batter into prepared baking pan.
  4. Bake for 20 to 25 minutes or until brownies appear set on top. Cool completely in pan on a wire rack. Cut into squares.
