Cheesy Egg Breakfast Sliders

This is the easiest (and tastiest!) way to make breakfast for a crowd. Everyone gets their own breakfast sandwich when you make these sliders stuffed with eggs, ham, and your favorite cheese.

Ingredients

  • Nonstick cooking spray

  • 8 eggs

  • cup milk

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

  • 12 Hawaiian sweet rolls, split

  • ¼ cup honey mustard

  • 12 ounce thinly sliced Black Forest ham; 12 brown-and-serve sausage patties, heated;* or 6 slices bacon, crisp-cooked and halved

  • 12 thin slices white cheddar, cheddar, or Swiss cheese ( 5 oz.)

  • ¼ cup butter, melted

  • 2 teaspoon finely chopped green onion

Directions

  1. Preheat oven to 350°F. Line a 13x9-inch baking pan with foil, extending foil over edges. Coat foil with cooking spray. In a medium bowl whisk together eggs, milk, salt, and pepper. Pour mixture into prepared pan. Bake 8 to 10 minutes or until set. Using foil, lift out egg mixture. Cut into twelve 3 1/4x3-inch pieces.

  2. Arrange bottom halves of rolls in same baking pan and spread with honey mustard. Layer with ham, egg pieces, and cheese, cutting or folding to fit rolls as needed. Add top halves of rolls. Drizzle with melted butter and sprinkle with green onion.

  3. Bake 5 to 8 minutes or until cheese is melted and rolls are light brown.

*Tip

If using sausage patties, heat in the microwave 20 seconds.

Tip

You may keep the baked sandwiches warm in a 200°F oven up to 30 minutes before serving.

To Make Ahead

Prepare as directed through Step 2, except do not drizzle with melted butter. Cover and chill 2 to 4 hours. To serve, preheat oven to 350°F. Drizzle rolls with melted butter and sprinkle with green onion. Bake 10 minutes or until cheese is melted and rolls are light brown.
