Cheesy Diner Style Hash Browns

Directions

  1. Peel potatoes; coarsely shred to make 4-1/2 cups. Rinse shredded potato and pat dry. Line salad spinner with paper towels. Add shredded potatoes to salad spinner and spin to remove excess liquid. In a large bowl combine potato, salt, and pepper.
  2. In a 10-inch nonstick skillet with sloped sides heat 1 tablespoon of the oil over medium-high heat. Add potatoes to the skillet, spreading into an even layer. Gently press with the back of a spatula to form a cake. Reduce heat to medium. Cook, without stirring, about 12 minutes or until the bottom is golden brown and crisp.
  3. Invert a plate over the top of the skillet. Carefully invert the skillet to transfer the potatoes to the plate. If needed, add the remaining 1 tablespoon oil to the skillet. Using the plate, slide the potatoes back into the skillet, uncooked side down. Cook about 8 minutes more or until the bottom is golden brown. Top with cheese slices. Cover and cook 1 to 2 minutes more or until cheese melts.

Taco

Prepare as above, except omit American cheese slices. Before serving top with 2 cups taco meat, 1 cup shredded lettuce, 1/2 cup chopped tomato and a dollop of sour cream.
