  • Preheat oven to 350°F. Line a 15x10-inch baking pan with foil. Place a rack in prepared pan and coat rack with cooking spray. In a large bowl combine next eight ingredients (through black pepper). Stir in bread crumbs and 3 Tbsp. of the barbecue sauce until crumbs are moistened; stir in cheese. Add ground beef chuck and sirloin; mix lightly until combined.**

  • Line a 9x5-inch loaf pan crosswise with bacon slices, overlapping slightly. Press meat mixture into bacon-lined pan. Fold ends of bacon over top of loaf. Set the rack over loaf pan and invert meat loaf onto rack; remove pan. Return rack with loaf to foil-lined pan.

  • Bake 1 hour. Brush loaf with remaining 1 to 2 Tbsp. barbecue sauce. Bake 25 minutes more or until loaf is done (160°F). Let stand 10 minutes before serving. Using two spatulas, transfer meat loaf to a platter; cut into slices.

*Tip

If desired, substitute 8 oz. bulk sweet Italian sausage, ground turkey, or ground pork for 8 ounces of the ground beef.

To prevent tough meat, do not overwork the meat mixture when mixing.
