In a mixing tin, combine the Chardonnay, citrus vodka, orange juice, Vanilla-Thyme syrup, and lemon juice. Add ice, shake well, and strain into a cocktail glass over fresh ice. Top with a splash of seltzer and garnish with a sprig of thyme. Vanilla-Thyme Syrup Combine 1 cup water, 1 cup sugar, two sprigs of fresh thyme, and one vanilla bean pod, split lengthwise. Bring to a low simmer, stirring well, and remove from heat, once the sugar has dissolved. Allow the syrup return to room temperature, giving the thyme and vanilla time to fully infuse. Strain off the solids and store in the refrigerator up to two weeks. Chardonnay Creamsicle PItcher Cocktail Making this recipe as a pitcher cocktail? Batch all ingredients together, except for the seltzer, and chill down in the fridge up to a day in advance. When you're ready to serve, pour the mixture over ice in a punch bowl or pitcher and add the seltzer and garnishes.Prepare Vanilla-Thyme Syrup. In a pitcher or punch bowl, combine one 750-ml bottle Chardonnay, 1 3/4 cups vodka or citrus vodka, 3 1/2 cups freshly squeezed orange or clementine juice, 3/4 cup Vanilla-Thyme Syrup, and 1/3 cup fresh lemon juice. Add ice, top with 1 3/4 cups seltzer, and add 8 to 12 sprigs fresh thyme for garnish. Serve individual servings over fresh ice and garnish with additional thyme sprigs.
