Champagne Float

Directions

  1. In a small saucepan combine raspberries, sugar, water, and salt. Bring to boiling. Reduce heat and cook and stir until raspberries are soft and sugar has dissolved. Remove from heat and cool slightly.
  2. Transfer raspberry mixture to a blender or food processor and blend until smooth. Strain into a pint-size jar; discard solids. Cool completely.
  3. In a stemless wine glass, add sorbet. Drizzle with 2 tablespoons of raspberry syrup* and slowly top with chilled champagne. Garnish with additional raspberries and/or lemon slices, if desired.
