Directions

  1. Preheat oven to 350 degree F. Lightly coat a 2-quart rectangular baking dish with cooking spray; set aside.
  2. In a large skillet cook mushrooms and onion in hot olive oil until tender; set aside.
  3. In a large bowl beat together the cottage cheese, eggs, and flour. Stir in feta cheese, artichokes, mushroom mixture and Parmesan cheese. Pour mixture into the prepared dish.
  4. Bake about 35 minutes or until a knife inserted near the center comes out clean. Top with tomato wedges, if desired. Makes 8 servings.

Versatile and easy dish. I made it as a low carb side dish with beef, but it could also easily do for a nice brunch. We like spicy, so added in 3 cloves of garlic and a jalapeno. Will def be making again. ( Also halved the recipe and it made plenty for two).
