In a small bowl whisk together coconut milk, water, egg, maple syrup, and oil. Add to flour mixture. Stir just until combined. For each pancake, spoon about 1/4 cup batter onto a hot, lightly oiled griddle. Spread batter if necessary. Cook over medium 2 to 3 minutes per side or until pancakes are golden brown; turn over when surfaces are bubbly and edges are slightly dry. Serve warm. Serve with additional maple syrup.
