Carrot Mexican Mule

Directions

  1. In a cocktail shaker muddle 1 sprig rosemary and the jalapeno pepper. Add carrot juice, tequila, and lime juice. Add ice cubes; cover and shake until very cold. Strain liquid into a copper mug filled with crushed ice. Add ginger beer. Garnish with remaining rosemary sprig and lime wedge.

Use bottled fresh carrot juice or juice 2 fresh carrots with a juicer to equal 1/4 cup juice.
