Carrot-Clementine Agua Fresca

Directions

  1. In a blender combine about one-third of the carrots, one-third of the chopped clementines, and 1 cup of the water. Cover and blend until smooth. Strain through a fine-mesh sieve into a pitcher or large glass jar. Discard solids. Repeat twice.
  2. Stir lime juice and the 2 tablespoons honey into strained juice mixture. If desired, add additional honey to taste.*
  3. Serve over ice. Garnish with clementine slices. If desired, serve with additional honey.
