Directions

  1. Preheat oven to 350 degrees F. Spread half of the tortilla chips on a 12-inch ovenproof platter or pizza pan; set aside.
  2. In a large nonstick skillet heat oil over medium heat. Add onion, fresh ginger and allspice. Cook and stir until onions are tender. Add Shredded Pork Roast; heat through. Set aside.
  3. In a small bowl stir together black beans, salsa and lime juice. Set aside.
  4. Top chips with half of the pork mixture and half of the salsa bean mixture. Top with remaining chips, pork and salsa bean mixture. Sprinkle chips with cheese. Bake for 10 minutes or until cheese melts.
  5. Top with green onions and cilantro, if desired. Serve with sour cream and salsa, if desired.
