  • Lightly coat a 4- to 5-qt. slow cooker with cooking spray. Place turkey in prepared cooker.

  • In a small bowl combine onion, ginger, the allspice, cumin, 1/2 tsp. of the pepper, 1/4 tsp. of the salt, the garlic salt, and thyme. Pour over turkey; stir to coat. Add sweet potatoes, broth, and coconut milk.

  • Cover and cook on low 4 1/2 hours, stirring in rice, beans, and remaining 1/4 tsp. salt and 1/4 tsp. pepper the last 10 minutes of cooking.

  • Stir in cilantro and lime juice.

Combine 1 cup long grain rice and 2 cups water in a saucepan. Bring to boiling; reduce heat to low and simmer, covered, 15 minutes. Remove from heat and let stand 5 minutes before using.
