Caramelized Onion and Gorgonzola Crostini


Tender caramelized onions and salty blue cheese make these crostini bread appetizers taste rich and decadent. Try them to kick off your next cocktail party or holiday gathering.

  • 1 8 ounce loaf baguette-style French bread

  • Olive oil (optional)

  • 3 tablespoon butter

  • 3 medium sweet onions, such as Vidalia or Maui, halved and sliced

  • 1 cup crumbled Gorgonzola cheese or crumbled blue cheese (4 ounces)

  • Kosher salt

  • Freshly ground black pepper


  1. Preheat oven to 425°F. Using a serrated knife, diagonally slice the bread. Arrange bread slices on two large baking sheets. If desired, brush each slice lightly with olive oil. Bake for 8 to 10 minutes or until light brown, turning slices over once halfway through baking.

  2. In a large skillet melt the butter over medium-low heat. Add onions; cover and cook for 12 to 14 minutes or until tender, stirring occasionally. Uncover; cook and stir for 3 to 5 minutes more or until golden brown. Spoon onion mixture over toasts. Sprinkle with cheese. Sprinkle with salt and pepper.


Prepare as directed in Step 1. Cool bread. Transfer to an airtight container; cover. Store at room temperature for up to 24 hours. To serve, preheat oven to 425°F. Arrange bread slices on baking sheet. Bake about 3 minutes or just until crisp. Continue as directed in Step 2.
