Caprese Pasta Salad

Directions

  1. Cook pasta according to package directions. Rinse under cold running water to cool; drain well.
  2. In a serving bowl combine pasta, tomatoes, mozzarella, sweet pepper, and basil. In a screw-top jar combine balsamic vinegar, olive oil, mustard, garlic, salt, and black pepper. Cover and shake well to combine. Pour over salad and toss to combine.

Chill salad overnight. Transport a serving of the salad in a container in an insulated lunch box with ice packs; refrigerate within 1 hour. Hold in the refrigerator for up to 5 hours.
