Directions

  1. Thaw berries, if frozen; do not drain. Mash berries; measure 1 cup. In 2-quart microwave-safe casserole combine the mashed berries, sugar, lemon juice, and butter.
  2. Microwave on 100% power (high) for 8 to 9 minutes or until mixture thickens and is reduced to about 1 cup, stirring every 2 minutes.** Cool. Cover and chill to store. (The mixture will thicken a little as it is cooled and chilled. If the consistency becomes too stiff, stir in water, 1 teaspoon at a time, to reach desired consistency.) Makes about 1 cup.

The 1/4 teaspoon butter or margarine is just enough to prevent excess foaming.

**Note:

If you prefer seedless jam, press the hot mixture through a sieve to remove seeds. The yield will be less than 1 cup (sixteen, 1-tablespoon servings).
