Directions

  1. Line a cookie sheet with waxed paper; set aside. In a large bowl combine 4 cups of the powdered sugar, the coconut, butter, vanilla, and salt. Beat with an electric mixer on medium speed until fluffy. Stir in pecans and remaining powdered sugar. Shape into 1-inch balls; place on prepared cookie sheet.
  2. Place chocolate pieces in a microwave-safe 4-cup measuring cup; microwave on 100 percent power (high) for 2 to 3 minutes or until smooth when stirred. Dip balls in melted chocolate; place back on cookie sheet; let stand until dry. Makes 60.
