Thread 2 or 3 marshmallows on each bamboo skewer, leaving space between them. Set aside.
In a medium saucepan heat the 12 ounces of candy coating over low heat until melted, stirring constantly. Remove from heat. Stir in a small amount of orange paste food coloring, tinting to desired color. (Add 1 teaspoon of shortening to melted coating if mixture is too thick.) Holding a skewer over the saucepan, spoon candy coating over marshmallows, spreading to coat evenly. Decorate marshmallows as jack-o-lanterns using candies. Place on parchment or waxed paper until set.
When set, store in decorative airtight containers at room temperature for up to 1 week. Makes 12 skewers.
