Directions
- In a mixing bowl combine light corn syrup, softened butter, and peppermint extract. Add powdered sugar, about 1 cup at a time, stirring until well combined.
- Stir desired food coloring into mixture. (Or, divide mixture in half and stir a different food coloring into each portion.)
- Shape candy mixture into 1-inch balls. Place the balls 2 inches apart on a baking sheet lined with parchment or waxed paper. Gently flatten each ball with the tines of a fork. Let candy stand at room temperature about 3 hours or until dry. Store tightly covered in refrigerator. Makes about 56 patties.

Prepare as directed above. Wrap and freeze for up to 1 month. To serve, let them stand at room temperature 2 to 4 hours, or until thawed.
