Cabbage and Apple Farro Toss

This crunchy combination of cabbage, apples, and bacon mixed with ancient grain farro is a delicious side that can be on your table in less than 30 minutes.

  • 3 cup shredded green cabbage

  • 1 apple, cored and chopped

  • ½ cup chopped onion

  • 3 slices bacon, chopped

  • 2 cup cooked farro, wild rice blend, or barley

  • 2 tablespoon cider vinegar

  • 1 teaspoon honey

  • 1 teaspoon Dijon-style mustard

  • Salt and black pepper


  1. In an extra-large skillet cook cabbage, apple, onion, and bacon over medium heat about 6 minutes or until tender and bacon is crisp, stirring occasionally.

  2. Add farro to cabbage mixture in skillet. Stir in vinegar, honey, and mustard; stir to combine. Season to taste with salt and pepper.
