Buttery Celery Tortellini

Directions

  1. In a large skillet combine celery, water, butter, and salt. Bring to a gentle boil. Cook, uncovered, stirring occasionally, 25 to 30 minutes or until celery is tender and water is almost evaporated.
  2. Meanwhile, cook cheese tortellini according to package directions; drain. Toss tortellini with the celery and chives. Top with black pepper.

Made twice, first as written except 10 minutes for the braised celery, not 20 since we prefer tender crisp rather than mushy vegetables. Second time used unsalted chicken stock for the liquid, added a sliced onion. Marginally better.

A fine way to use up celery and as a lower calorie meal, but not a first choice dinner option for us. In our house, this is an adult meal, the middle school kids-- who like Chinese braised celery-- weren't that happy with it, so we added some jarred alfredo sauce for their portions.
