In a 4- to 5-qt.pot melt butter over medium heat. Add the next four ingredients (through garlic). Cook and stir 6 to 8 minutes or until tender. Stir in chicken. Cook and stir 2 minutes.
Add the next five ingredients (through hot sauce) to chicken mixture in pot. Bring to boiling; reduce heat. Simmer, covered, 30 minutes, stirring occasionally. Uncover; cook 15 minutes more, stirring occasionally. Top servings with blue cheese and serve celery stalks.
