Brown Sugar Pie Bars

Brown sugar pie is what you make when you want a little something for dessert but don't have a lot of ingredients. This Southern pie is like pecan pie without the pecans. The smaller bites that bars provide give you just enough of this sweet treat.

Ingredients

  • Nonstick cooking spray

  • 1 ½ cup all-purpose flour

  • 3 tablespoon granulated sugar

  • 1 teaspoon salt

  • ½ cup cold butter, cut up

  • 3 eggs

  • 3 ⅓ cup packed brown sugar

  • ½ cup butter, melted

  • 2 teaspoon vanilla

  • ½ teaspoon almond extract

Directions

  1. Preheat oven to 350°F. Line a 13x9-inch baking pan with foil, extending foil over edges. Lightly coat foil with cooking spray.

  2. For crust, in a food processor combine flour, granulated sugar, and 1/2 tsp. of the salt. Pulse to combine. Add cold butter; pulse until crumbly. Press evenly into the prepared pan. Bake about 15 minutes or until lightly browned.

  3. For filling, in a medium bowl lightly beat eggs. Whisk in brown sugar, melted butter, vanilla, almond extract, and the remaining 1/2 tsp. salt until combined. Pour over hot crust.

  4. Bake about 35 minutes or until filling slightly jiggles when pan is tapped. Cool in pan on a wire rack (filling will continue to set as it cools). Use foil to lift out uncut bars. Cut into bars.
