In a large bowl beat butter with a mixer on medium to high 30 seconds. Add the next four ingredients (through salt). Beat on medium 2 minutes, scraping bowl as needed. Beat in eggs, vanilla, and bourbon until combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour. Stir in chocolate and toffee pieces. Drop dough by small spoonfuls 2 inches apart onto ungreased cookie sheets. Bake 7 to 9 minutes or until edges are golden brown. Cool on cookie sheets 2 minutes. Remove; cool on wire racks.
