Border Grilled Turkey Salad

Directions

  1. Place turkey in a resealable plastic bag set in a shallow dish. For marinade, in a small bowl combine lime juice, chili powder, and garlic. Pour over turkey in bag. Seal bag; turn to coat turkey. Marinate in the refrigerator for 30 minutes to 3 hours, turning bag occasionally. Drain turkey, reserving marinade.
  2. For a charcoal grill, place turkey on the rack of an uncovered grill directly over medium coals. Grill for 16 to 20 minutes or until turkey is tender and no longer pink (170 degrees F), turning and brushing once with marinade halfway through grilling. (For a gas grill, preheat grill. Reduce heat to medium. Place turkey on grill rack over heat. Cover and grill as directed.) Discard any remaining marinade. Cut up or shred turkey into bite-size pieces.
  3. Meanwhile, for dressing, in a small bowl combine dried tomato vinaigrette and jalapeno pepper.
  4. In a large bowl combine lettuce and/or arugula and cucumber. Divide lettuce mixture among four dinner plates. Arrange turkey and tomato on top of lettuce mixture. Drizzle with dressing and sprinkle with tortilla chips.

*Tip:

If you can't find bottled dried tomato vinaigrette salad dressing, substitute 2/3 cup bottled red wine vinaigrette salad dressing and 2 tablespoons snipped and drained oil-packed dried tomatoes.

**Test Kitchen Tip:

Because chile peppers contain volatile oils that can burn skin and eyes, avoid direct contact with them as much as possible. When working with chiles, wear plastic or rubber gloves. If your bare hands do touch the peppers, wash well with soap and warm water.
