Learn about BHG's Editorial Process Published on May 16, 2016 Print Rate It Share Share Tweet Pin Email Hands On Time: 30 mins Total Time: 3 hrs Servings: 8 Jump to Nutrition Facts Ingredients 1 3-3.5 pound boneless beef brisket flat half Kosher salt and freshly ground black pepper 1 tablespoon olive oil 2 slices bacon, chopped 1 medium onion, chopped (1/2 cup) 6 cloves garlic, minced 1 cup cider vinegar 2 ½ cup fresh blueberries ¼ cup packed brown sugar ½ teaspoon kosher salt 8 Pretzel buns, split Radish sprouts or greens (optional) Directions Preheat oven to 325°F. Season beef with some salt and pepper. In Dutch oven heat oil over medium-high heat. Brown beef well on both sides. Remove from pan; set aside. Cook bacon in pan until lightly browned. Add onion and garlic; cook about 5 minutes or until onion is tender. Stir in vinegar, 2 cups of the berries, sugar, and the 1/2 teaspoon salt. Bring to boiling; stir to dissolve sugar. Reduce heat; boil gently, uncovered, 10 minutes. Return beef to pan. Cover; roast 2 1/2 to 3 hours or until tender. Remove meat from pan, reserving liquid; thinly slice against grain. Skim off fat; stir in remaining berries. Serve meat on buns with reserved liquid. Top with sprouts, if desired.
