  • In a small bowl combine cream cheese and blue cheese. Beat with an electric mixer on medium speed until smooth. Stir in apricots, 3 tablespoons of the walnuts, and salt. Shape mixture into 16 balls. In a small bowl mix 2 tablespoons of the walnuts and the rosemary. Roll balls to lightly cover with nut mixture.


To Make Ahead:

Prepare nuts as directed in Step 1. Loosely cover cooled nuts with foil. Store at room temperature for up to 24 hours.
