Instructions Checklist
  • In a 4- to 6-quart nonreactive heavy pot combine all ingredients except vodka. Bring to boiling; reduce heat. Simmer, uncovered, about 3 hours or until no excess liquid remains and mixture is thick and mounds on a spoon, stirring occasionally. Stir in vodka.

  • Ladle hot jam into hot, sterilized half-pint canning jars, leaving a 1/4-inch headspace. Wipe jar rims; adjust lids and screw bands.

  • Process filled jars in a boiling-water canner 10 minutes (start timing when water returns to boiling). Remove jars from canner; cool on wire racks.

*Tip

Do not peel or seed tomatoes. For easy prep, cut tomatoes into about 1 1/4-inch pieces and pulse in a food processor, one-fourth at time, until finely chopped.

Simply Serve

Substitute this tomatoey jam, which boasts all the flavors of the choice brunch beverage, for wing sauce when grilling or broiling chicken wings.
