Black Cherry Reindeer Cake

Directions

  1. Prepare cake mix according to package directions, except add almond and vanilla with the eggs. Bake in two greased and floured 8- or 9-inch round cake pans according to package directions. Cool completely.
  2. On a cake platter or stand, place 1 cake layer in the center. Frost top and sides of cake layer with chocolate frosting until smooth. Repeat with remaining cake layer.
  3. In the center of each cake layer, pipe a 4-inch ring with 8 dollops of whipped cream. Top each dollop with a red maraschino cherry. Pipe a 6-inch ring with 16 dollops of whipped cream around the first ring. Top each dollop with a green candied cherry. Insert pretzel halves around edge of each cake layer for antlers.
  4. To serve, slice each cake layer into 8 pieces, making sure each slice has one red cherry, 2 green cherries, and 2 antlers. Serve with cherry pie filling, if desired.

This holiday cake recipe makes two single-layer cakes to serve 16. If you're serving a smaller group (of 8 or fewer), before frosting the second cake, wrap the unfrosted cake in plastic wrap and freeze up to 3 months for later use.
