  • Prepare cake mix according to package directions, except add almond and vanilla with the eggs. Bake in two greased and floured 8- or 9-inch round cake pans according to package directions. Cool completely.

  • On a cake platter or stand, place 1 cake layer in the center. Frost top and sides of cake layer with chocolate frosting until smooth. Repeat with remaining cake layer.

  • In the center of each cake layer, pipe a 4-inch ring with 8 dollops of whipped cream. Top each dollop with a red maraschino cherry. Pipe a 6-inch ring with 16 dollops of whipped cream around the first ring. Top each dollop with a green candied cherry. Insert pretzel halves around edge of each cake layer for antlers.

  • To serve, slice each cake layer into 8 pieces, making sure each slice has one red cherry, 2 green cherries, and 2 antlers. Serve with cherry pie filling, if desired.

Tips

This holiday cake recipe makes two single-layer cakes to serve 16. If you're serving a smaller group (of 8 or fewer), before frosting the second cake, wrap the unfrosted cake in plastic wrap and freeze up to 3 months for later use.
