Our Best Turkey Burgers

Directions

  1. In a medium bowl combine milk, panko, shallot, mustard, basil, garlic, salt, and pepper. Add ground turkey; mix well. Form into four 1/2-inch-thick patties.
  2. For a charcoal or gas grill, grill burgers on the rack of a covered grill directly over medium heat for 11 to 13 minutes or until patties are done (165 degrees F), turning once halfway through grilling. Serve burgers in split focaccia.

Italian Turkey Burgers:

Soak four 8- to12-inch bamboo skewers in water for 30 minutes. Prepare burgers as directed. Thread 1 pint assorted cherry tomatoes or baby heirloom tomatoes on skewers. Brush evenly with 1 teaspoon olive oil. Add the tomato skewers to grill for the last 6 minutes of grilling, turning to cook evenly. Remove tomatoes from skewers and pile on the burgers. Drizzle evenly with 1 teaspoon lemon juice and sprinkle with 1/4 teaspoon each salt and ground black pepper. Top with 1/4 cup shredded basil.

Per serving: 259 cal., 12 g fat (3 g sat. fat), 84 mg chol., 566 mg sodium, 14 g carb., 4 g sugars, 2 g fiber, 25 g pro.

Indian Turkey Burgers:

Prepare burgers as directed. In a small bowl stir together 1/4 cup Dijon-style mustard and 1/2 teaspoon curry powder. Spread focaccia evenly with mustard mixture. Top with burgers and, if desired, lettuce leaves and sliced tomato. (PHOTO- maybe stir in the finely shredded carrot and green onion into the mustard for some color?)

Mediterranean Turkey Burgers:

Grill four 1/2-inch-thick slices red onion to grill for 8 to 10 minutes or until tender and lightly charred, turning once halfway through grilling. Cool slightly; coarsely chop. Prepare burgers as directed. In a small bowl combine grilled onion, 3/4 cup chopped cucumber, 2/3 cup chopped, seeded tomato, 3 tablespoons chopped pitted Kalamata olives, 2 tablespoons snipped fresh mint, and 1 tablespoon lemon juice. Place spinach leaves on focaccia; top with patties and onion mixture.
