Beer-Marinated Steak

Directions

  1. Trim fat from steaks. Sprinkle steaks with salt and cayenne pepper. Place steaks in a freezer bag.
  2. For marinade, in a small bowl combine beer, brown sugar, oil, and mustard. Pour over steaks. Seal bag; turn to coat steaks. Freeze for up to 4 months.
  3. To serve, thaw in the refrigerator overnight.
  4. Drain steaks, discarding marinade. For a charcoal or gas grill, place steaks on the grill rack directly over medium heat. Cover and grill for 10 to 12 minutes for medium-rare (145 degrees F) or 12 to 15 minutes for medium (160 degrees F), turning once halfway through grilling. Cut each steak in half.

Broiling Directions:

Preheat broiler. Place steaks on the unheated rack of a broiler pan. Broil 3 to 4 inches from the heat for 12 to 14 minutes for medium-rare (145 degrees F) or 15 to 18 minutes for medium (160 degrees F), turning once halfway through broiling.
