Southwest Burger with Chili Salsa
- For salsa, in a medium bowl combine tomatoes, chile peppers, onion, cilantro, and the 1/4 teaspoon salt. Set aside.
- For burgers, in a medium bowl combine egg, bread crumbs, the water, oregano, thyme, the 1/2 teaspoon salt, the cumin, and chili powder. Add ground beef; mix well. Shape into four 3/4-inch-thick patties.
- For a charcoal grill, grill patties on the rack of an uncovered grill directly over medium coals for 14 to 18 minutes or until meat is done (160 degree F),* turning once halfway through grilling and adding cheese slices for the last 1 minute of grilling. (For a gas grill, preheat grill. Reduce heat to medium. Place patties on grill rack over heat. Cover and grill as above.) Serve burgers on kaiser rolls or hamburger buns with salsa. Makes 4 servings.

The internal color of a burger is not a reliable doneness indicator. A beef patty cooked to 160 degree F is safe, regardless of color. To measure the doneness of a patty, insert an instant-read thermometer through the side of the patty to a depth of 2 to 3 inches.
