Learn about BHG's Editorial Process Updated on August 4, 2021 Print Share Share Tweet Pin Email Photo: Andy Lyons Prep Time: 15 mins Grill Time: 8 mins Total Time: 15 mins Servings: 2 Yield: 2 sandwiches Jump to Nutrition Facts Ingredients 2 3/4-inch slices All-American Classic Meat Loaf, recipe below 2 slices provolone cheese (optional) 2 tablespoon mayonnaise 1 teaspoon bottled minced roasted garlic ⅓ cup bottled roasted red sweet peppers, cut in thin strips 4 slices bread (potato or sourdough) ½ cup fresh baby arugula or baby spinach All-American Classic Meat Loaf 2 lightly beaten eggs ⅔ cup beef broth 1 tablespoon Worcestershire sauce 2 cup sourdough bread cubes ¼ cup grated Parmesan cheese 2 tablespoon yellow mustard 4 cloves garlic, minced 1 teaspoon salt ½ teaspoon black pepper ¼ teaspoon crushed red pepper 1 pound ground beef sirloin 1 pound ground beef chuck 1 medium green sweet pepper, chopped ½ of a medium onion, chopped ½ cup ketchup 2 tablespoon packed brown sugar 2 teaspoon cider vinegar Directions Lightly grease indoor electric grill or grill pan, then preheat over medium heat. Place meat loaf slices on grill. Be sure to carefully place, turn, and remove the slices to keep them in one piece. Grill 8 minutes or until heated through, carefully turning once halfway through grilling. Top with cheese. Grill 1 to 2 minutes more or until cheese is melted. In small bowl combine mayonnaise, roasted garlic, and 2 Tbsp. of the roasted red peppers that have been finely chopped. Mash with a fork to combine. Spread mayonnaise mixture on one side of each bread slice. Top two slices with warmed meat loaf slices, arugula, remaining roasted red pepper strips, and remaining bread. Makes 2 sandwiches. All-American Classic Meat Loaf Preheat oven to 350 degrees F. In large bowl combine eggs, beef broth, and Worcestershire sauce; stir in sourdough bread cubes. Let stand 15 minutes. With fork, mash bread cubes into small pieces. Stir in Parmesan cheese, mustard, garlic, salt, black pepper, and crushed red pepper. Add ground beef sirloin and ground beef chuck, green sweet pepper, and onion. Using hands, mix ingredients together well (do not overmix.) Lightly pat meat mixture into 9x5x3-inch loaf pan.* With fingers, lightly pull loaf away from sides of pan. Bake, uncovered, for 1-1/4 hours. For topping, in small bowl stir together 1/2 cup ketchup, 2 Tbsp. packed brown sugar, and 2 tsp. cider vinegar. Spoon on loaf. Bake 15 minutes more or until an instant-read thermometer inserted into center of loaf reads 160 degrees F. Let stand 10 minutes. To remove, use two large spatulas inserted along short edges to lift loaf from the pan to platter.
