Fireside Chili for Two
- In a 1-1/2-quart slow cooker, stir together meat; onion; sweet pepper; undrained tomatoes; undrained chili beans with chili gravy; broth; chipotle chile peppers, chipotle chili powder, or crushed red pepper; garlic salt; cumin; and oregano.
- Cover. If cooker has heat setting choices, cook on low-heat setting for 6 to 8 hours or on high-heat setting for 3 to 4 hours. If cooker does not have heat setting choices, cook for 5 to 6 hours. Serve with Fried Cheese Tortilla. If desired, serve with sour cream, cheese, avocado, and/or corn chips; garnish with fresh thyme. Makes: 2 servings

If desired, substitute 8 ounces ground beef or pork for the boneless beef top round steak or boneless pork shoulder. In a medium skillet, brown ground meat; drain off fat before using.
Because chile peppers contain volatile oils that can burn your skin and eyes, avoid direct contact with them as much as possible. When working with chile peppers, wear plastic or rubber gloves. If your bare hands do touch the peppers, wash your hands and nails well with soap and warm water.
Fried Cheese Tortilla
- Brush tortilla lightly with cooking oil. Heat a large nonstick skillet or griddle over medium heat. Add tortilla; cook about 1 minute or until bottom is golden and crisp. Turn tortilla over; sprinkle with cheese. Cook about 1 minute more or until bottom is golden and crisp and cheese is melted. Cut into wedges.
