Creamy Meatball Casserole


When it comes to easy casseroles, it doesn't get much easier (or tastier!) than this. Frozen meatballs and cream of mushroom soup make an unsuspecting duo in this simple casserole.

  • 1 10.75 ounce can condensed cream of mushroom soup or cream of onion soup

  • 1 cup milk

  • ½ cup sour cream

  • ½ teaspoon salt

  • teaspoon ground black pepper

  • 1 20 ounce package refrigerated red-skinned potato wedges

  • 1 16 ounce package (32) frozen cooked meatballs

  • 1 16 ounce package frozen stir-fry vegetables (any combination)


  1. Preheat oven to 350 degrees F. In a large bowl, combine soup, milk, sour cream, salt, and pepper. Stir in potatoes, meatballs, and frozen vegetables.

  2. Transfer mixture to an ungreased 3-quart rectangular baking dish. Bake, covered, about 1 hour or until heated through. Makes 6 servings.
