I was surprised at how good this was! If you are watching your meat, you could do it without meatballs. I thought the potatoes were the star.

I was surprised at how good this was. We used seasoned potatoes. The potatoes made the dish. The meatballs are good, but if you are trying to lose the protein, the dish would be perfectly fine without them.

FYI - The potatoes mentioned are called Simply Potatoes by Crystal Farms. It is a green package. They are yummy!

This recipe sounds like something my family would enjoy, but I have been unable to find this variety of refrigerated potato at any of our local markets. Are they still making it?
