Put your skillet to good use with this taco-inspired dinner made with hash browns, beef, and salsa. Finish with all of your favorite taco toppings like lettuce, tomatoes, cheese, and sour cream for extra flavor.
In a large skillet cook meat over medium-high heat until brown; transfer to a colander to drain off fat.
In the same skillet heat oil over medium heat. Add hash browns, spreading in an even layer. Cook, without stirring, for 6 minutes. Stir potatoes; spread in an even layer. Cook, without stirring, for 3 to 4 minutes more or until brown.
Stir in meat, salsa, and corn; heat through. Sprinkle with cheese. Sprinkle with lettuce and tomatoes. Top with sour cream. Serve from skillet.
