Beef-Filled Sweet Potatoes

Roasted sweet potatoes can definitely make a tasty Paleo meal, they just need a little extra protein. Make a big batch of ground beef to keep in your fridge, then use some to top off this healthy Paleo recipe.

3 1/2 cups plus 4 potato halves


  • recipe (2 3/4 cups) Big Batch Ground Beef

  • ½ cup dried cranberries

  • cup 50% less sodium beef broth

  • teaspoon ground cinnamon

  • 2 sweet potatoes, roasted, halved, and mashed slightly*

  • ½ cup chopped walnuts

  • ¼ cup sliced green onions

Big Batch Ground Beef

  • 3 pound ground beef

  • 3 cup chopped onions (3 medium)

  • 6 cloves garlic, minced

  • 1 teaspoon sea salt

  • 1 teaspoon black pepper


  1. In a large saucepan combine Big Batch Ground Beef, cranberries, broth, and cinnamon. Bring to boiling, stirring occasionally. Transfer to airtight storage containers. Cover and chill up to 4 days. Heat through before serving. Serve over sweet potato halves and top with walnuts and green onions.

Big Batch Ground Beef

  1. In a very large skillet cook and stir ground beef, onion, and garlic over medium-high about 10 minutes or until no pink remains. Drain off fat. Stir in salt and pepper.


For roasted sweet potatoes, preheat oven to 375°F. Scrub two 10-oz. sweet potatoes. Prick all over with a fork. Bake 40 to 45 minutes or until a paring knife is easily inserted into potatoes. Remove and cool. Cut in half lengthwise; mash slightly with a fork. Transfer to an airtight container. Cover and chill up to 4 days. To reheat, place 1 sweet potato half on a plate and microwave 45 to 60 seconds or until heated through.
