Cover and chill up to 4 days. Heat through before serving. Serve over sweet potato halves and top with walnuts and green onions.

For roasted sweet potatoes, preheat oven to 375°F. Scrub two 10-oz. sweet potatoes. Prick all over with a fork. Bake 40 to 45 minutes or until a paring knife is easily inserted into potatoes. Remove and cool. Cut in half lengthwise; mash slightly with a fork. Transfer to an airtight container. Cover and chill up to 4 days. To reheat, place 1 sweet potato half on a plate and microwave 45 to 60 seconds or until heated through.
