Prepare couscous according to package directions, except omit oil. Meanwhile, cut tofu into 1/2-inch cubes. Pat tofu dry with paper towels.
In a large skillet heat oil over medium-high heat. Add tofu; stir-fry for 5 to 7 minutes or until tofu is browned. Stir tofu and olives into couscous. Transfer to a serving dish. Top with cheese. Makes 4 servings.
