Directions

  1. Wash broccoli; remove outer leaves and tough parts of broccoli stalks and discard. Cut broccoli into 1/2-inch pieces. (You should have about 3 cups.) Cook broccoli, covered, in a small amount of boiling salted water for 8 to 12 minutes or until crisp-tender; drain.
  2. In a medium saucepan cook the rice and onion in margarine or butter until onion is tender but not brown. Remove from the heat. Stir in the broth, water chestnuts, water, lemon peel, and lemon-pepper seasoning. Bring to boiling; reduce heat. Cover and simmer about 15 minutes or until rice is tender. Stir in the cooked broccoli. Remove from heat. Let stand, covered, for 5 minutes. Fluff with a fork. Makes 4 side-dish servings.
