Directions

  1. In a medium saucepan stir together the chicken broth, zucchini, bulgur, carrots, onion, dried oregano (if using), and crushed red pepper.
  2. Bring to boiling; reduce heat. Simmer, covered, for 12 to 15 minutes or until bulgur is tender and broth is absorbed. Stir in the fresh oregano (if using) and lemon peel.
