In a suacepan bring the water, groats, and salt to boiling. Reduce heat. Simmer, covered, for 15 minutes or until the groats are tender. Drain excess liquid.
Meanwhile, heat oil in a large non-stick skillet. Add pepper strips. Cook and stir over medium-high heat for 4 minutes or until peppers begin to brown. Add Cajun seasoning; cook for 30 seconds more. Reduce heat to medium. Add beans. cook and stir for 2 minutes more or until beans are heated through. Stir in tomatoes. Remove from heat.
To serve, place groats in bowl. Top with sweet pepper mixture, green onions, and cheese. Makes 3 main-dish servings.
