Directions

  1. Heat oven to 350 degrees F. Lightly coat a 13x9x2-inch baking pan with cooking spray. Place the dry cake mix in a large bowl; cut in butter or margarine until mixture resembles coarse crumbs. Stir in the 1-1/2 cups pecans. Reserve 1-1/2 cups of crumb mixture. Press remaining crumb mixture evenly onto bottom of prepared pan. Bake for 10 minutes.
  2. Meanwhile, combine tofu, eggs, sugar, lemon peel, lemon juice, and vanilla in a blender container or food processor bowl; cover and blend or process until smooth. Pour evenly over partially baked crust; sprinkle with reserved crumb mixture and the 1/2 cup pecans. Press down lightly. Bake for 30 to 35 minutes or until set and lightly browned. Cool in pan on a wire rack. Cut into bars.
