Balsamic-Dried Cherry Salad Toss

Keep this delicious salad vegan-friendly by swapping the honey for maple syrup or agave.

  • 8 cup torn mixed salad greens

  • 1 medium red onion, halved and thinly sliced

  • 1 cup dried tart cherries, chopped

  • 1 cup toasted pecans, chopped

  • ¼ cup olive oil

  • 3 tablespoon balsamic vinegar

  • 1 tablespoon reduced-sodium soy sauce

  • 1 ½ teaspoon Dijon-style mustard

  • 1 teaspoon honey

  • ¼ teaspoon black pepper

  • Shaved Parmesan cheese (optional)


  1. In an extra-large bowl toss together mixed greens, onion, dried cherries, and pecans.

  2. For dressing, in a small bowl whisk together next six ingredients (through pepper).

  3. Pour dressing over greens mixture; toss to coat. If desired, top with cheese.
