  • In the same saucepan combine hot Mac and Cheese Base, Asiago cheese, and Monterey Jack cheese. Cook and stir over medium heat until cheeses are melted. Stir in cooked macaroni.

  • Meanwhile, in a medium skillet heat butter over medium-low heat until melted. Add shallot; cook and stir until shallot is softened. Stir into macaroni mixture. Spoon mixture into a 2-quart square baking dish. Sprinkle with panko.

  • Bake about 40 to 45 minutes or until golden and bubbly. Sprinkle with parsley, mint, and pepper. Serve immediately.
