Baked Apple Dumplings with Caramel-Nut Filling

Directions

  1. Preheat oven to 375 degrees F. For sauce, in a small saucepan combine the water, sugar, and cinnamon. Bring to boiling; reduce heat. Simmer, uncovered, 5 minutes. Add butter; stir to melt. Pour sauce into a 2-qt. square baking dish.
  2. On a lightly floured surface, unfold one pie crust. Lightly brush with water. Place second pie crust on top of the first. Roll into an 18-inch circle. Cut four 7-inch circles.* if desired, use a small cookie cutter to cut shapes from scraps.
  3. Core and peel the apples. Cut thin slices from bottoms of apples so apples stand straight. In a small bowl combine peanut butter, caramel topping, and dried fruit. Fill apples with peanut butter mixture. For each dumpling, place a pastry circle on top of one of the apples and fold pastry over the apple, pleating at the bottom. Place dumplings in the baking dish on top of the sauce. In a small bowl combine the egg and 1 Tbsp. water. Brush tops and sides of dumplings with egg mixture. Place cutouts on apples, if using.
  4. Bake, uncovered, 50 to 55 minutes or until apples are tender and pastry is golden. Cool 30 minutes. Spoon sauce over dumplings and serve warm.
