This Paleo noodle bowl is fresh, easy, and delicious thanks to spiralized carrot "noodles." Inspired by a Vietnamese bahn mi sandwich, this noodle bowl recipe is full of tasty ingredients like pork tenderloin, radishes, and cucumber.




  • In a large straight-sided skillet heat oil over medium-high. Add pork to skillet; season with salt and black pepper. Cook 5 minutes or until no longer pink and edges are browned. Stir in the next five ingredients (through ginger). Cook and stir just until boiling. Stir in spiaralized carrots. Cook about 2 minutes or until heated through and carrots are tender.

    Divide pork mixture among shallow bowls. Top with radishes, cucumber, and cilantro.
