Bahn Mi Noodle Bowl

This Paleo noodle bowl is fresh, easy, and delicious thanks to spiralized carrot "noodles." Inspired by a Vietnamese bahn mi sandwich, this noodle bowl recipe is full of tasty ingredients like pork tenderloin, radishes, and cucumber.

Ingredients

  • 1 tablespoon coconut or olive oil

  • 1 pound pork tenderloin, trimmed and cut into bite-size pieces

  • ¼ teaspoon sea salt

  • ¼ teaspoon black pepper

  • 2 cup vegetable stock

  • ½ cup rice vinegar

  • 1 - 2 teaspoon crushed red pepper

  • 1 tablespoon honey

  • ½ teaspoon grated fresh ginger

  • 12 ounce fresh or frozen spiralized carrots (thawed, if frozen)

  • ¼ cup thinly sliced radishes

  • ¼ cup thinly sliced English cucumber

  • 2 tablespoon snipped fresh cilantro

Directions

  1. In a large straight-sided skillet heat oil over medium-high. Add pork to skillet; season with salt and black pepper. Cook 5 minutes or until no longer pink and edges are browned. Stir in the next five ingredients (through ginger). Cook and stir just until boiling. Stir in spiaralized carrots. Cook about 2 minutes or until heated through and carrots are tender.

  2. Divide pork mixture among shallow bowls. Top with radishes, cucumber, and cilantro.
