  • Thaw shrimp, if frozen. Peel and devein shrimp, leaving tails intact if desired. Rinse shrimp; pat dry. Place in a resealable plastic bag set in a shallow dish. Remove 1 tsp. zest and squeeze 3 Tbsp. juice from lemon. For marinade, combine lemon zest, 2 Tbsp. lemon juice, 1 tsp. chili-garlic sauce, and 1/4 tsp. of the salt. Pour marinade over shrimp. Seal bag; turn to coat shrimp. Marinate at room temperature 15 minutes, turning bag once.

  • Meanwhile, for sauce, in a small bowl combine remaining 1 Tbsp. lemon juice, remaining 1/4 tsp. salt, the mayonnaise, green onions, and 2 tsp. chili-garlic sauce. Cover and chill until ready to serve.

  • Preheat broiler. Drain shrimp; discard marinade. Wrap each shrimp in a piece of bacon, securing bacon by skewering shrimp with metal skewers (neck to tail in a half-moon).

  • Place shrimp on rack of a broiler pan. Broil 3 to 4 inches from heat 7 to 9 minutes or until shrimp are opaque and bacon is crisp, turning twice. Serve shrimp with sauce.
